How did this recipe come into being? Well, I had a friend that had a birthday coming up, so I thought I’d make her a bunch of lovely raw lemon berry mini-cheesecakes. I usually use Heather Pace’s recipe found here, but I found myself lacking the sufficient amount of lemons and I was all out of mixed frozen berries! What to do?
